Canal cruise is worth an hour or so of your time . Loads of obscure museums pointed out (handbags anyone?) book via trip advisor to save 10 euro a head.

People go to Amsterdam for the 3 Hs. Heritage herbs or hookers.
The painting Militia Company of District II under the Command of Captain Frans Banninck Cocq, (Also called the Nightwatch) in the Rijksmuseum is well worth a visit: also go to the van Gogh museum, it's pretty good too.

Very close to the Anne Frank house is an amazing pizzeria called La Perla. Follow this up with an ice cream at Monte pelmo.
Agreed with others though - I work in Amsterdam but would never live there - I live in the Hague.
The Nemo museum is actually very impressive also, very clever.
Rent a bike and feel like a local, particularly around the Vondelpark.

The Pancake Bakery always gets a visit whenever I've been Amsterdam. It's on Prinsengracht (Princes Street) just around the corner from the great cheese shop which has been mentioned and Anne Franck House...

There's an excellent cheese shop in town, too.
I found it by chance when I was just wandering around because I had three hours to spend in town between flights.
However, it's easy to find - just ask for the area where the prostitutes sit in the windows, and it's on the opposite side of the street. (I think a canal runs most of the length of that street, but it goes underground at one end).
Alternatively, if you want a non-embarrassing way to find the area where the prostitutes sit in the windows, ask for a marvellous cheese shop...

Van Gogh museum across the park from the Rijksmuseum. Last time I went you could buy tickets from some of the booths in the park rather than join the queue at the museum.
Hire a bike from the train station & take the ferry from there and go and look at some windmills
Avoid the red light district and anyone English

Worth going to The Rijksmuseum just to have a gander at The Night Watch by Rembrandt. It's impressive, even if you're not that interested in art. If you are, though, lots of other work in there well worth seeing.
Just wandering along the canals is interesting. The Dutch are very house proud and love to leave their interiors visible, so you can discretely have a good old nose at how the dyke plugging, tulip munchers live.
They have some fabulous Indonesian restaurants there. Get yourself served up a nice rice table and let the world fall out of your bottom.
Alternatively, just get fucking caned on the gear and head over to the red light district to get your dyke plugged/tulip munched.

Both my children visited Amsterdam (separately) and both enjoyed it.
You could find the giant yellow clog. My son whatsapped me a photo of him sitting inside it, looking totally and very obviously baked. It must have seemed like a good idea to him to send the photo at the time. Naturally I gave him an earful when he got home.
